Falafel on Flatbread

( i omitted falafel, feta, arugula, lemon and it was still good)
INGREDIENTS:
~Middle Eastern FlatBread- (Similar to pita bread, except a billion times better because they are soft and chewy and have great flavor!)
~Hummus (My absolute favorite is the Original from Trader Joe's- love it!)
~Tzatziki Sauce, recipe below (Or Trader Joe's is really good and easy, and it has big chunks of cucumber, yum!)
~Arugula
~Cucumber, diced
~Tomatoes, diced
~Feta Cheese
~Falafel's (I just bought some pre-made one's from Costco, the brand is "Falafal Republic". I just heated them in a skillet with some butter to make them extra crispy)
~Squeeze of Lemon
How to Assemble:
Heat the falafels in a skillet with some butter until they are hot throughout and extra crispy. Add a little salt and pepper and a little lemon.
Heat the flatbread, spread a layer of hummus and tzatziki sauce over the top. Then add the arugula, hot falafels, tomatoes, and cucumbers. Sprinkle a little feta cheese and add a quick squeeze of lemon over the top for a little citrus and freshness- fold together and ENJOY!
Tzatziki Sauce
2 cups thick greek yogurt
1/2 Tbsp garlic puree
2 -3 Tbsp fresh lemon juice
2 1/2 Tbsp dill
1 Tbsp oregano
2 large cucumbers, persian
2 Tbsp olive oil
Salt and pepper
2 Tbsp Feta cheese
Mint, optional
