Makes 22 about 93 calories per ball
Ingredients
2 egg whites

2 cups all-purpose flour
2 teaspoons baking powder
1 tablespoon white sugar (
I use 2 tablespoons)
1/2 teaspoon baking soda
1/2 teaspoon salt
2 egg yolks
4 tablespoons butter,
melted
2 cups buttermilk
2 teaspoon vanilla
(optional, make sweeter for sweet filling)
1 cup vegetable oil for frying (optional I
use butter)
In a clean glass or metal
bowl, beat the egg whites with an electric mixer until they can hold a stiff
peak. Set aside.
Mix together the flour,
baking powder, salt, baking soda, sugar, egg yolks, melted butter and
buttermilk at one time and beat until smooth. Gently fold in the egg whites
last.
Put about 1tablespoon of
vegetable oil in the bottom of each aebleskiver pan cup and heat until hot.
Pour in about 2 tablespoons of the batter into each cup. As soon as they get
bubbly around the edge, turn them quickly (Danish cooks use a long knitting
needle, but a fork will work, flip fast by grabbing either edge and rotate or
grab corner and slowly pull). Continue cooking, turning the ball to keep it
from burning.
*NOTES: 1. Preheat cast iron at 5 temperature on electric stovetop
2. Remove cast iron from heat and wipe out bottom of circles with paper towel. Then spray with olive oil spray until small pool at bottom of circle. 3. Still removed from heat fill batter quarter of the way in the circle, add filling, then spoon additional overtop filling. The batter should only fill 3/4 of circle because will grow. 4. Add pan back to heat and wait till see bubbles to slowly turn with two knifes or sewing needles. Once flip only need to heat 1-2 minutes on other side. |
