Tiffani's Coconut Cake

1 cup coconut oil
4 eggs
2 tablespoons coconut extract
2 cups sugar
mix together and add:
1 cup buttermilk
2 cups flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 cup unsweetened shredded coconut

Pour batter in greased and floured bundt pan or 2 loaf pans. Bake 1 hour at 325 degrees.

glaze:
5 tablespons butyter
3/4 cup water
1/2 cup coconut milk
2.5 cups sugar

boil 5 minutes while stirring, the add:
1 1/2 tsp coconut extract
1 tsp vanilla extract

Pour glaze over cake while warm. turn cake out of pan. cool for 3 hours before serving
